Eating the seasons

Although the list of seasonal vegetables we are using this autumn is long, we are particularly excited about a few recipes that truly celebrate November ingredients.

Our Wild Mushroom Gnocchi with Roasted Chestnuts and Celeriac Cream is a blend of some of the best ingredients the UK soil has to offer this month. The wild mushrooms, which have come a little later in the season this year due to a particularly warm summer, are now in full swing and add a fantastic richness of flavour to the gnocchi. The chestnuts, which we gently roast, are also an autumn treat and the hope you enjoy the sweet note of the celeriac!

All our salads also highlight the Best of British this November, with the pears from the Pear and Roquefort Salad and the butternut in the Roasted Butternut and Barley Salad rocking our socks in particular.

And for the vegetarians in our midst, the beetroots that feature in our Smoked Beetroot Bourguignon are gently cooked to ensure all those nutrients, including vitamin B9, manganese, potassium, iron, and vitamin C are preserved.

As always, our November and early December recipes focus on the best seasonal produce we can get our hands on.
